Author's Description:
11/2 tablespoons vegetable oil
1 medium-size yellow or white onion, cut into 5mm pieces
3/4 teaspoon cumin seeds
2 teaspoons grated fresh turmeric, or 1 teaspoon ground
11/2 teaspoons chili powder
11/2 teaspoons salt
4 medium-size tomatoes, coarsely chopped, with juices
2 medium-size White Rose potatoes (about 250 grams), cut into 20mm pieces
1 tablespoon freshly squeezed lemon juice
1/4 cup water
500 grams medium-size shrimp, shelled, deveined if necessary, and tails removed
350 grams medium-size or large shrimp, shelled, deveined if necessary, and tails left intact
12 sprigs fresh cilantro, for garnish
Steamed basmati rice
1. Heat the oil in the pressure cooker over medium-high heat until beginning to smoke
2. Add the onion and cook, stirring occasionally, until beginning to wilt – about 1 minute
3. Stir in the cumin seeds,turmeric, chili powder, and salt and continue cooking until the
spices become fragrant – about 2 minutes
4. Add the tomatoes and their juices, the potatoes, lemon juice and water, Stir and bring to a boil
5. Add the shrimp and Seafood
6. lock the lid
7. Bring to pressure over high heat – about 3 minutes
Immediately remove from the heat and let sit for 7 minutes to finish cooking
8. Gently release any remaining pressure
9. Garnish with the cilantro sprigs and serve with some rice
